Roasted Greek Potatoes


  • 1 24oz bag Klondike Gourmet® Red Skin, Golden Fleshed Potatoes
  • 1 c. olive oil
  • 1 c. lemon juice
  • 2 c. chicken broth
  • 2 cloves garlic, minced
  • 1 tsp. oregano
  • Salt, pepper, paprika

Preparation Steps

  1. Quarter the potatoes, and place into a roasting pan.
  2. Mix oil, lemon juice, broth, garlic, and oregano until well combined. Pour over potatoes in pan. Mixture should cover about half the potatoes. (If necessary, make more of the mixture.)
  3. Cover with foil. Bake at 350°F for 1 ½ hours, or until potatoes are soft. Uncover and cook at 400°F until potatoes are crispy.
