Klondike Petite® Red Potato Mashed Healthier Casserole


  • 8 large Klondike Petite® Red Potatoes
  • 1 ½ tsp. salt
  • 1 tbsp. butter
  • ½ C. milk
  • 1 ¾ cups plain Greek yogurt
  • 6 oz. fat free cream cheese, soft
  • 1 tbsp. butter

Preparation Steps

  1. Cut potatoes into chunks. Place in a large saucepan and cover with cold water. Bring to a boil. Cook 15-20 minutes or until tender. Drain.
  2. Mash potatoes. Add salt and 3 tbsp. butter. Stir to combine. Slowly add milk, until reaching a creamy consistency. Add less or more, as desired.
  3. Mix yogurt and cream cheese with potatoes until smooth.
  4. Pour into a casserole dish. Dot with 1 Tbs. butter and sprinkle with paprika.
  5. Bake uncovered at 350°F for 30 minutes.
