Ingredients
- 8 large Klondike Red Potatoes
- 1 ½ tsp. salt
- 1 tbsp. butter
- ½ C. milk
- 1 ¾ cups plain Greek yogurt
- 6 oz. fat free cream cheese, soft
- 1 tbsp. butter
Preparation Steps
- Cut potatoes into chunks. Place in a large saucepan and cover with cold water. Bring to a boil. Cook 15-20 minutes or until tender. Drain.
- Mash potatoes. Add salt and 3 tbsp. butter. Stir to combine. Slowly add milk, until reaching a creamy consistency. Add less or more, as desired.
- Mix yogurt and cream cheese with potatoes until smooth.
- Pour into a casserole dish. Dot with 1 Tbs. butter and sprinkle with paprika.
- Bake uncovered at 350°F for 30 minutes.
