Klondike Potato Truffles

Ingredients

  • 1/4 c. softened butter
  • 4 oz. cream cheese
  • 1 C. mashed Klondike Rose® Potatoes
  • 1/3 C. cocoa Powder
  • 1 tsp. Vanilla
  • 1 lb. powdered sugar
  • 1 (7 oz.) bag coconut
  • Ground cinnamon

Preparation Steps

  1. Cream butter and cream cheese. Add potatoes and cocoa powder
  2. Beat in the vanilla and powdered sugar and mix well.
  3. Mix in coconut.
  4. Roll into balls. Roll in cinnamon and refrigerate until firm.
