Creamy Grilled Potato Salad

Ingredients

  • 2- 1.5 lb. bags Klondike Gourmet® Potatoes
  • ½ C. mayonnaise
  • 1 tbsp. chopped fresh parsley
  • 1 tbsp. chopped fresh basil
  • 1 tbsp. Dijon mustard
  • 1 tbsp. lemon juice
  • 2 tbsp. olive oil
  • ½ tsp. sea salt
  • ½ tsp. fresh ground black pepper

Preparation Steps

  1. Spray a grill basket with cooking spray. Preheat grill to medium-high.
  2. Place potatoes in grill basket and grill until tender, about 10 minutes. Remove potatoes from grill; cool.
  3. In a large bowl, combine mayo, parsley, basil, mustard, lemon juice, olive oil, salt and pepper. Whisk until well combined.
  4. Stir the potatoes into the dressing mixture. Serve at room temperature or well chilled.
