Chipotle Marinated Potatoes


  • 4 Klondike Rose® potatoes
  • 2 tablespoon olive oil
  • ½ tsp. chipotle pepper
  • ¼ tsp. chili powder
  • 1 clove garlic, minced
  • 1 tsp. onion, chopped fine
  • 1 tsp. sugar
  • ½ tsp. salt

Preparation Steps

  1. Quarter the potatoes and cook them until they are fork tender. Drain.
  2. To make marinade, mix olive oil with all seasonings. Place cooked potatoes in a large Ziploc bag. Pour in marinade. Let potatoes marinade for 1-6 hours or overnight.
  3. Place the potatoes on skewers and grill about 7 minutes per side, until they are nice a browned.
